How we choose
Nothing gets on this shelf by default.
Taste it first
Every new product gets tasted in the store before it gets ordered — a distributor sample, a farmer’s first crate, a new roaster’s batch. Someone here tries it and says yes or no.
Ask where it’s from
We want the name of the farm, the road it’s on, and how far it traveled. If a distributor can’t answer that, the product doesn’t move forward.
Compare it on the shelf
When we already carry something similar, the new item goes head-to-head with it — on taste, on price, and on how it holds up after a few days out.
Watch it sell
The first month decides it. If it sells the way we hoped, it gets a permanent slot. If it sits, we tell the supplier why and move on.
